What is the reasoning for fortifying wine?
To add body and increase the wine’s ability to age.
How is fortified wine made?
For most sherry styles, the base wine is a neutral, dry white Palomino grape. Fortification can occur after fermentation for DRY. The degree of fortification depends on the style of sherry being made. Fortified with a mix of grape spirit and mature sherry wine.

Solera System is the series of barrels where sherry ages, lending distinctive flavor and continuity of brand and style.

Yeast grows in unfilled portion of barrel and prevents oxidaiton and spoilogy.
