Red Wine Natural Jus
A red wine and veal demi glaze reduction.
Roasted veal bones simmered for 24 hours. Strained and reduced for 12 hours. We add roasted mirepoix, tomato paste, and red wine and reduced to a paste. Fined strained and chilled.
Bearnaise Sauce
Classic french sauce made with emulsion of egg yolks and clarified butter. Finished with a reduction of vinegar, wine, terragon, shallots, and fresh chopped terragon. Derived from hollandaise.

Creamy Apple Horseradish
A blend of creme fraice, sour cream, and apple butter; mixed with spicy prepared horseradish
Prepared horseradish or fresh available upon request.

Chimichurri
A traditional Argentinian condiment of parsley, oregano, cilantro, garlic, chili, flakes, and vinegar blended with EVOO
Peppercorn Cream
A mixture of veal demi glaze, brandy, shallots, black and green peppercorns, and reduced heavy cream. Also referred to as Au Poivre sauce
