Soluble, hydrophilic amino acids on the surface.
Are fibrous proteins soluble/insoluble and why?
Insoluble as they have a large proportion of hydrophobic amino acids.
What role do most fibrous proteins play?
Structural
Where is collagen found?
Tendons, ligaments and skin.
Where is keratin found?
Hair, fingernails and outer surface of skin.
Where is elastin found?
Skin and walls of arteries.
Main feature of collagen
Strong molecule due to polypeptide structure.
Main feature of keratin.
Extremely strong as it contains a high proportion of cysteine forming disulphide bonds.
Main feature of elastin
Elastic as it is held together by crosslinks
