- the dutch the first to suceed in refining these early distillates by introducing a second distillation
- 19th, 1831 irish aeneas coffey patented two column still (increase percentage of alcohol & segregate all waste)

A
- distil alcoholic fluid (the mash) to seperate alcohol from water
- alters the flavor & strength of alcohol
- heated between 78.3° (poiling point of alcohol) and 100°(boiling.point of water) -> alcohol will vaporize while water remains liquid
