  • Lobsters are caught fresh in Maine and delivered to restaurants the next day
  • The trucks never leave empty, and collect scraps hat will later be used on the lobster boats

  • Listened to chefs complain for years about not having access to fresh herbs and produce, so he retired from the kitchen and became a farmer
