  • involves the removal of outer cherry using a water mill and removal of the mucilage (coffee pulp_ using fermentation inside water tanks.
  • clean bean will be sundried, milled and roasted

  • mucilage is not remove
  • coffee can be sundried whole without the outer skin of the cherry removed, or wet milled to removed the skin
