Two main processing methods
Washed and non washed
Washed method of processing
- involves the removal of outer cherry using a water mill and removal of the mucilage (coffee pulp_ using fermentation inside water tanks.
- clean bean will be sundried, milled and roasted
Non washed method of coffee processing
- mucilage is not remove
- coffee can be sundried whole without the outer skin of the cherry removed, or wet milled to removed the skin
Honeyed coffee- sun dried with the mucilage still on the bean
