What Are Endives

     • Endive is a leaf vegetable in the chicory family, which also includes radicchio, escarole, frisee, and curly endive. It has a nutty, slightly bitter flavor and crunchy leaves. When raw, endive is bitter and crunchy, but cooking it melts away the bitterness and reveals a soft, nutty flavor.

What Is Butternut Squash

     • Butternut squash is a nutritional powerhouse of essential vitamins, minerals, and antioxidants. It adds flavor to meals while being low in calories and high in fiber. It is an orange-fleshed winter squash, celebrated for its versatility and sweet, nutty flavor. Both the skin and flesh are hard and firm, and like pumpkins and zucchini, it is part of the cucurbitaceae family. Though commonly considered a vegetable, butternut squash is technically a fruit. Butternut squash is tasty and packs a punch of vitamins, minerals, fiber, and antioxidants!
     Squash is among the oldest known crops, dating back 10,000 years to Mexico and Central America. The name squash comes from the Native American word askutasquash, which means uncooked or eaten raw.

What Is Red Kuri Squash

    • Red kuri squash, also known as Hokkaido pumpkin, or onion squash, is a small to medium sized winter squash with a hard, orange skin. Its sweet, nutty flavor is what gives it its name, as the word "kuri" is the Japanese word for chestnut.

What Is Asiago Pressato

     • Asiago, is a cow's milk cheese, produced only on the Asiago plateau in the Veneto foothills in Italy. The cheese-making tradition in the provinces of Vicenza and Trento dates back to more than thousand years. Traditionally, it was made from sheep's milk but today it is produced from unpasteurised cow's milk.

      Texture wise, Asiago goes through many changes, assuming different textures, according to its aging. There are two types of Asiago - fresh Asiago (Asiago Pressato) has a smooth texture while the aged Asiago (Asiago d'allevo) has a crumbly texture. Asiago d’allevo is matured for different time periods; Mezzano for 4-6 months, Vecchio for more than ten months and Stravecchio for two years. On the other hand, Asiago Pressato made with whole milk is matured for a month and sold fresh as a softer, milder cheese.

     Asiago pressato has a sweet, buttery flavor with a mild tanginess and salty aftertaste.

What is Creamy Ponzu

      • Creamy ponzu sauce is a sauce made with ponzu, a Japanese citrus condiment, and other ingredients, such as mayonnaise ( or Aioli) , cilantro, lime juice, ginger, and cayenne pepper.

      Ponzu is a flavorful, versatile sauce that's made from a combination of soy sauce or tamari, citrus juice, mirin, katsuobushi (bonito flakes), and kombu (kelp). It has a complex flavor that's sweet, salty, bitter, and sour all at once, with notes of umami, tang, and citrus.
