Hydrolysis reaction
Reaction with water or hydroxide ions that breaks a compound in two.
Condensation reaction
A reaction in which two small molecules react together to form a larger molecule with the elimination of a small molecule e.g water.
Zwitterion
Dipolar ionic form of an amino acid thats formed by the donation of a hydrogen ion from the carboxyl group to the amino group. Both charges are present so no overall charge.
Isoelectric Point
The pH at which a zwitterion exits.
Optical Isomers
Stereoisomers that are non-superimposable mirror images of each other (enantiomers).
Chiral Carbon
A carbon atom attached to four different atoms or groups.
Alpha amino acid
The -COOH group is attached to the same carbon atoms as the -NH2 group.
