How are esters produced?
They are formed from a reaction between an alcohol and a carboxylic acid
What are the uses of esters?
Esters are used as:
- flavourings
- fragrances
- solvents for other non-polar compounds
What is a condensation reaction?
A reaction that forms esters between carboxylic acids and alcohols by removing water.
What is a hydrolysis reaction?
A reaction that breaks down esters back into alcohols and carboxylic acids by adding water.
How are edible fats and oils formed?
They are esters formed from the condensation of glycerol
(propane - 1,2,3 - ol)
There are 3 carboxylic acids (fatty acids)
Differences in mp between fats and oils
Oils have lower mp than fats do, this is because they have more double bonds present (they are unsaturated). The double bonds prevent the molecules to pack close together so the intermolecular forces are weaker.
Why do we need fats and oils?
- They are a concentrated source of energy for us.
- They are essential for the transportation and storage of fat-soluble vitamins for our bodies.
