What can an emulsifier be used to do?

Prevent non-polar and polar liquids separations into layers

How are emulsifiers used in food made?
A
By reacting edible oils with glycerol.
In the molecules formed, only one or two fatty acid groups are linked to each glycerol backbone.

In the emulsifier, what is hydrophobic and what is hydrophilic
A
The hydroxyl group present in the emulsifier are hydrophilic.
They dissolve in water.
The fatty acid chains are hydrophobic. They dissolve in oil.
This forms a stable emulsion
