DL - Salmonella Flashcards
How does salmonella infection occur? 2
ingestion or occasionally inhalation of viable bacteria.
When do infected carrier pigs excrete salmonella?
Intermittently -esp when stressed.
What does EU regulation 2160/2003 require?
To cut the incidence of food-borne diseases such as Salmonellosis in the EU. It also requires that either animals leaving for slaughter or carcasses at the slaughterhouse must be tested for all salmonella serotypes with PH significance.
How was the incidence of salmonellosis in member states calculated?
In each state, pigs were randomly selected from slaughterhouses from which 80% nation’s pigs were slaightered. Sampling was stratified by month to cover the different seasons and included ileocaeccal LNs, carcase swabs and muscle samples or blood samples. Results were tested at VLA and passed to DEFRA to collate into report to send to European Commission.
What would you be looking to detect in a LN sample?
Actual salmonella bacteria
What would you be looking to detect in a carcase swab?
Environmental salmonella contamination
What would you be looking to detect in meat juice?
immune response to animal from salmonella exposure
Is S.typhimurium prevalent in humans?
S.typhinurium common in humans and pigs therefore pork can be a source of infection
Is S.enteriditis common?
E.enteriditis is most common serotype in humans but not in pigs
What are the 5 key messages from the ‘Serious about Salmonella’ campaign?
Salmonella control starts with weaners
Rodents, wild birds and cats carry salmonella
Farm hygiene and biosecurity can prevent salmonella infection
All in all out production can prevent contamination between batches
Pig health, feed and water can help control salmonella infection.
