ingested protein / glycoprotein (allergen) [Beef, dairy products, fish, wheat …..] - Ability to induce hypersensitivity depends upon size & structure of protein
- Molecular weight 10,000 to 70,000 Daltons stimulates immune response
- Common dietary protein allergens: 18,000-36,000 Daltons

Clinical signs of food allergy
A
- Onset: 4 months – 14 years old
- Non-seasonal pruritic dermatitis, otitis externa,
intermittent vomiting, diarrhea, colitis, borborygmus - GI symptoms only in 10-15% of the cases
- 20-30% cases have concurrent hypersensitivities!!
