What are salad dressings

A

Used to add/enhqnce flavour and provide variety
Usually made from a combination of oil and acidic liquids - vinegar, lemon juice
Two main dressing and their derivitives mayo and vinaigrette

What is Mayonnaise

A

An emulsification of oil, acid liquid & egg yolk with seasonings.
Egg yolk contains an emulsifier called lecithin which holds the mayo in a stable form

How do you prepare from making mayonnaise

A

All utensils clean and dry
correct sized & shape bowls
don’t use an aluminium bowl

How do you correct a split mayo

A

Whisk unstable mixture on to
-a little boiling water
Fresh egg yolk and a little cold water
Some stable mayo

What is a vinaigrette

A

French dressing
Oil, vinegar, mustard, seasoning
The oil and liquid does not stay in a stable emulsion for long and will separate

A

Acidulated cream - commonly used with salads containing fruit
Yoghurt dressing - An alternative to mayonnaise and acidulated cream
