Cocktails - Spring/Summer 2019 Flashcards
Seersucker Suit
ketel one cucumber mint vodka, pimm’s no.1, lemon 11
We took a simple, summery classic, the Pimm’s Cup, and fortified it by adding the cucumber-mint infused vodka…
two classic flavors commonly associated with the original (and with summer). Extremely refreshing and light, it’s an easy sipper for those that don’t want anything too aggressive.

Inspired by another classic, the pisco sour, this drink showcases a beautifully floral pisco by famed producer, Miguel Torres, and is layered with complex citrus notes from the Aperol, fresh grapefruit and lemon juice, as well as a pink peppercorn syrup that adds another floral and peppery component. Shaken hard with egg white, this drink has an exquisitely creamy, frothy texture.

Beach, please!
below deck spiced rum, bacardi rum, rhubarb liquor, blood orange liquor, pineapple, lemon, nutmeg 12
An original tiki-style drink that is inspired by a few flavors of summer that pair well together. We’ve combined spiced and white rums with rhubarb, blood orange and pineapple to create a bright and tropical combination that packs a punch. The nutmeg is freshly grated on top of the crushed ice that echoes some of the drink’s spice elements and adds an aromatic element of interest to every sip.

A Clockwork Orange
buffalo trace bourbon, campari, licor 43, china china, orange 12
This bourbon-based cocktail is moderately punch-like and fairly easy drinking, as it’s finished with fresh OJ, but the base is complex and slightly bitter, as we use Campari and China China, both of which are citrus-based bitters, as well as
Licor 43, which balances it out with a slight vanilla sweetness.
1.25 oz. Buffalo Trace Bourbon .5 oz. Campari .25 oz. Liqor 43 .25 oz. Bigallet China China .75 oz. fresh OJ Methode/ Garnish: Build in mixing tin and shake vigorously with ice. Strain into footed scotch glass. Garnish with expressed orange swath.
Garden Party
snap pea-infused vodka, hawthorn’s gin, crème de violette, luxardo maraschino, tarragon syrup 12
Sous chef Bill was the starting point of this cocktail, who initiated the idea of infusing vodka with the season’s sweetest sugar snap peas. The result is a beautifully fresh and naturally sweet spirit that immediately transports you to a green garden! My inspiration for the actual cocktail was crossing two classics: The Aviation and a Vesper and I wanted to continue playing with the idea of a garden theme. Bring together the vegetal notes of the snap peas, the botanical notes of gin, the herbaceous notes of tarragon, and the floral notes of violets, then you’ve got yourself a garden party!!
1 oz. Snap Pea-infused Vodka (Bare Bone)
1 oz. Hawthorn’s Gin
.25 oz. Luxardo Maraschino
.25 oz. Crème de Violette
.25 oz. tarragon simple
Methode/ Garnish:
Stir in pint glass and strain into small coup.
Finish with expressed lemon swath (discarded) and skewered “drunken snap pea”.
El Capitan
herradura’s double barrel reposado tequila, xicaru mescal joven, genepy des alpes, combier, lime, agave 15
Consider this an herbaceous and complex smoky-margarita. The base is a combination of our FGR exclusive double barrel aged tequila from Herradura and another FGR exclusive, the smoky, but fresh, Xicaru joven (unaged) mescal. We’ve incorporated classics such as Combier, fresh lime, and agave syrup, which are natural combinations with agave-based spirits and bring in a lot of familiarity, but we’ve added Dolin Genepy des Alpes, an alpine herbal liquor to bring a cooling, chartreuse-like herbacousness and complexity. It’s like putting a ski slope right in the middle of a hot, sandy beach!
1 oz. Xicaru Mezcal .75 oz. Herradurra Double Reposado .75 oz. Dolin Genepy des Alpes .25 oz. Combier .5 oz. fresh lime juice .25 oz. Agave syrup Methode/ Garnish: Build in mixing tin and shake vigorously with ice. Strain over medium cube in FGR glass. Finish with lime swath.
Irish Goodbye
slane irish whiskey, high west double rye whiskey, punt e mes, amontillado sherry, bitters 13
This is your most boozy, stirred, masculine cocktail. If your guest likes drinks like Manhattans, Old Fashions, or Vieux Carrés, this is the drink for them. Slane Irish whiskey is triple-cask aged, using virgin charred barrels, bourbon barrels, and sherry casks that layer in flavor and yield a smooth finish. The High West double rye is complex and spicy. Punt e Mes is a vermouth with a touch of bitterness to balance the sweet. The Amontillado is medium dry and slightly nutty.
These are all layered in equal parts and integrate very well with each other.
Ingredients: .75 oz High West Double Rye .75 oz Slane Irish Whiskey .75 oz Punt e Mes .75 oz. Hartley & Gibson Amontillado Sherry 1 dash Angosura bitters 1 dash Peychaud’s bitters Methode/ Garnish : Build in pint glass and stir. Strain over big cube in highball glass. Finish with lemon swath.
