Muddle lime in Highball glass. Rim with salt and add ice. Build the drink over the ice and stir gently

2 oz Pimms No 1
1/2 oz Lime juioce
1/2 oz Lemon Juice
1/2 oz Simple Syrup
1/2 oz Gin
Soda
Muddle cucumber and simple in tin. Add remaining ingredients, shake with ice. Fine-strain into Highball glass, top with soda. Garnish with Mint and Cucumber.

1 oz Lime or Lemon Juice (or combo of both)
3/4 simple syrup
1 egg white
1 dash angostura bitters
Shake all ingredients except Bitters with ice and strain into lowball glass. Garnish the glass with a dash of Bitters

3/4 Lemon Juice
1 tsp Sugar
Soda Water
1 egg white

Combine Lemon Juice and Sugar until dissolved. Shake with Sloe Gin, Egg White and ice and strain into glass filled with ice. Fill with Soda Water.
