What does an emulsifier do?
An emulsifier stops oil and water from separating into layers
What is meant by the term “hydrophilic”?
This means : “water loving”
What is meant by the term “hydrophobic”
Water “hating”
What do emulsifiers do to food? How does this improve the taste?
Emulsifiers allow water and oils to mix. This means that they mix far better in foods, making the foods more palatable.
What is an emulsion?
Emulsions are not soluble in water. They are a semi-solid collection of (usually) oil droplets in water, and have special properties.
What type of bonds do unsaturated oils contain?
Carbon carbon double bonds: C=C
What happens if you mix unsaturated oils with bromine water?
Theobromine water becomes colorless (this is the bromide ions dissociate, and join individual carbons, breaking the double bond (forms 2CH3Br)
What is meant by a finite resource?
When it’s gone, it’s gone! It is not a sustainable source of energy - it WILL eventually run out.
Give two disadvantages of using hydrogen as a fuel ?
Hard to store
Highly flammable
How is crude oil formed?
High temperatures and pressures on layers of sediment that are full of organic material produces crude oil over millions of years
Describe how any two properties of crude oil fractions depend on the size of the molecule?
Darker and is more viscous
Why is propane preferred to butane as a winter fuel?
Propane is a shorter chain hydrocarbon then butane this makes it more flammable
