A semihard cow’s milk cheese (named after Abondance cattle and the Abondance valley) with a fat content of 40-49% that dates back to the fifth-century monks of l’Abbaye de Saint d’Abondan and is made in the department of Savoie in eastern France, then ripened in 15-20lb wheels for at least 90 days.
