Makes cell membrane stiffer and in cooler temperature it pack tightly together, dense and fairly rigid
Saturated fatty acid
Less tightly packed, increase its fluidity, in cooler temperature cannot pack together as tightly because of then bent structure of the tails
Unsaturated fatty acid
Maintains fluidity across a wide range of temperature
