What is complex carbohydrates
Made up of sugar molecules that are strung together in long complex chains
Found in peas beans and whole grains
What is simple carbohydrates
Broken down quickly by the body to be used as energy
Found in sweets syrups and table sugar
What is the difference of simple and complex carbohydrate
Simple carbs=quick energy, fast digestion
Complex carbs= sustained energy, slower digestion, better for blood control
differences in mono, di and polysaccharides
Mono (singular)= one sugar molecules. Cannot be broken down further, quickly absorbed
Disaccharides= two mono liked together. Must be broken down into mono during digestion
Poly= long chains of mono. Complex, slow digestion, provide long lasting energy
What happens when too much carbs in the diet
Weight gain (stored as fat if not used for energy)
Blood sugar spikes and crashes
Increased risk of heart disease
Tooth decay
Digestive issues
What happens there is too little carbs in the diet
Low energy and fatigue
Poor concentration
Muscle loss
Digestive problems (constipation)
What is is caramelisation
Sugars break down into smaller molecules forming golden brown colour and sweet taste
What temp does caramelisation occur
160-180
What is gelatinisation
Starch granules absorb cold water and begin swelling. Becomes more viscous and sets when cooled
What temperature does gelatinisation occur
60-80
What is dextrinisation
Starch breaks down into dextrins (shorter chains of carbohydrates) when exposed to dry heat. Causing browning
Eg toasted bread, roasted potatoes
