• weigh a small amount of food, skewer it onto a mounted needle
  -add certain volume of water to a boiling tube, measure temperature of water and record
• set fire to food using bunsen, hold it under tube until it goes out
• keep setting food on fire and repeat till it no longer sets on fire
• measure temp of water again, calculate the change
