What is the vinification process of CS

A

Destemmed and crushed
- The stems give a herbaceous +astringent character
The thick skins are capable of wines deep in colour
- leaving grapes to maturate before maturation begins
Fermentation temperatures = 26-30
- warm enough for sufficient extraction
- cool enough to promote fresh fruit flavours
Post fermentation to soften tannins
Oak maturation
Blends w/ Merlot in France
Blinns w/ Shiraz in Australia
