What is a Negociant?
A grape/wine buyer who produces and sells wine.
What is Metayage?
Cultivating land for a proprietor who recieves a portion of the product.
What is Fermage?
Cultivation of land for a proprietor while paying rent.
What is The Bourgeoisie?
French term for the middle class, a group that destroyed aristocratic privilege.
What is Selection Massale?
A vineyard management technique where old vines are replaced with superior stock from the same vineyard.
What is Creme de Cassis?
Black currant liqueur, specialty of Burgundy, ingredient of the Kir Cocktail.
What is a Monopole?
A vineyard entirely owned by a single domaine.
What is a Rift Valley?
A lowland in hilly/mountainous region created by a geological shift.
What is a Combes?
A steep narrow valley, through which a river does not run.
What are Andouillette Sausages?
Course grain sausage, made with pork, intestine, chitterlings, pepper, wine, onion. Originating in Burgundy.
What is Salade Lyonnaise?
A green salade with croutons, poached egg, vinaigrette, with bacon or chicken pate and dandelions.

What is the D974?
a Highway that cuts all the way down through Burgundy starting a the Cote D’Or. Nearly all vineyards of note are West of it.
What does Maison Refer to on a Bottle?
Indicates a Negociant bottling rather than a Domaine/Estate Bottling
