take 1/2 chicken and brine for 48 hours then put into buttermilk/jalapeño/garlic marinade for 24 hours then drench in flour and buttermilk and fry at 300 degrees for 18 minutes then cook at a lower temp so it cooks from the inside out. crispy golden brown, tender. boneless except for wing joint
