describe and explain the properties of water
polar, O is -ve H is +ve due to electronegativities of its atoms
what shape is the water molecule

why are ionic and polar substances soluble in water
because water is also polar and so dipole interactions can occur between the molecules

hydrogen bonding, linear(straight)
why are non-polar molecules hydrophobic
there is a powerful interaction between the water molecules (hydrogen bonding) and so they prefer to interact with themselves rather than the non-polar molecules

hydrocarbons (fats/oils)
