- Avoid the use of Oak by fermenting in Stainless Steel or epoxy lined cement tanks
- Avoid allowing MLF to start by chilling the wine and adding SO2
- Avoid Lees use (sur lie / lees stirring) by racking off the lees or chilling and sterile filtering.

- Will avoid oxidisation by harvesting at night or very early morning to keep grapes cool and reduce risk of oxidisation.
- Will use S02 to avoid oxidisation

- Avoid lees stirring
- Avoid lees maturation
