Beef tartare - ingredients
Beef tenderloin, capers, shallots, Tabasco, anchovy, parsley, chives, Worcestershire and an egg.
Served with crostini, truffle oil, romaine hearts
Green salad
A variety of whole leaf lettuces - gem, butter, baby romaine, baby Lola Rossa, red leaf, green leaf, frissé) cherry tomatoes, cucumbers, 5 year old balsamic vinegar and olive oil Polvanera
Jacobs Caesar salad
Romaine hearts, double smoked bacon lardons, grana padano, croutons, Caesar dressing.
Dressing includes: egg, red wine vinegar, anchovy, garlic, lemon juice, Tabasco, Worcestershire, olive oil.
White anchovy as an upgrade. Lighter flavour, not cured as heavily
Chopped salad
Green/black kale, red cabbage, feta, grape tomatoes, cucumber, peas, scallions, parsley, croutons, olives.
Dijon vinaigrette Dressing includes: Dijon mustard, canola oil, shallots, white wine vinegar, honey
Oysters Rockefeller
Meatballs: ground beef, ground suet, melted bone marrow, Parmesan cheese, salt & pepper.
Horseradish cream: grated horseradish, sherry vinegar, cream, salt & pepper
Preparation: 6 oysters are coated with horseradish cream, sprinkled with Parm, and a 1/2 oz meatball. It’s browned. Parsley to finish
Chicken soup
Chicken, chicken bones, carrots, onions, celery, mushrooms, beans, orzo, peas, tarragon, parsley, chervil, canola oil, butter, flowers, S & P
Preparation: mirepoix and bones then strained. Added back in is shredded chicken, beans, peas, orzo, baby carrots, mushrooms, celery, onions, parsley, chervil, tarragon, edible flowers.
