Garnished with soy-mustard emulsion (soy sauce, dijon, honey, yuzu)
Drizzled with chili oil (paprika, crushed red pepper)

Served w/ pickled honshemiji mushrooms

Papdum crackers (lentil flour & cumin)
Grilled Octopus

Braised for 2 hours in white wine, white wine vinegar, celery, carrots, lemons, parsley, thyme, garlic, then GRILLED
Served on top of octopus escabeche: braised octopus champagne vinegar sliced red onion fresno chili parsley spanish olive oil
Served w/ purple potatoes
confit of heirloom tomatoes and capers

Pan seared and finished with butter
Served over spring onion puree (spring onion tops, creme fraiche, spinach)
Topped with short rib marmalade (braised short rib, red onion, red wine vinegar, sugar, veal stock)
Garnished with charred spring onions and preserved lemon
