Espãna Octopus with Livornese sauce and Bedded on a Sunchoke Purée, Salsa Verde, Castelvertrano Olive. Garnished with Sunchoke Leaf.

Stuffed Squab deboned (farmed, Ca.) with Fioe Gras & Squab. Fig Mustardo, additioned with Circular Crostino of Lardo gellatin & Chicken Liver Paté. Finished off with Squab-Jus & micro green salad.
