the process of turning yeast into sugar alcohol
How is alcohol fermented?
yeast is broken down by sugar through combustion which releases carbon dioxide forming water and ethyl alcohol. The sugar supply is exhausted or the alcohol reaches a concentration of 12-15% killing the yeast

heating fermented mixtures to trap purified alcohol in the evaporation
