What is sensory analysis testing and uses in the food industry
A scent if dicipline to measure, analysis and interprets reactions to the characteristics of food, as perceived as our senses
- modifications: consumer demands, see if they notice difference
- new productions: see if consumers like it
Conditions necessary
Lighting- correct, dark affects colour/hides imperfections, natural
Silence- maintain prevents sharing of info
Timing- mid morning, not full/hungry, tastes linger 30 mins before
Ventilation- removes lingering odours, windows open
Implementation method
Code, set tray, instruct tester, taste cleansing in between, record, responses collated on sheets, codes revealed, results calculated and presented
Types of test
Difference: triangle
Descriptive: ranking/rating
Preference: ranking, hedonic rating
