A scent if dicipline to measure, analysis and interprets reactions to the characteristics of food, as perceived as our senses

  • modifications: consumer demands, see if they notice difference
  • new productions: see if consumers like it

A

Lighting- correct, dark affects colour/hides imperfections, natural
Silence- maintain prevents sharing of info
Timing- mid morning, not full/hungry, tastes linger 30 mins before
Ventilation- removes lingering odours, windows open
