5. Enzymes Flashcards
Enzymes
These are proteins that function as biological catalysts
They lower the activation energy of a reaction
Catalyst
A substance that speeds up a chemical reaction without changing the overall reaction
Substrate
The molecules before they are made to react
Active Site
This is what the substrate fits into when a reaction happens
Product
The molecules that are made in the reaction
Catabolic reaction
Molecules are broken down
Anabolic reaction
Molecules are combined
Temperature
At low temperatures, enzymes are slow.
They speed up as the temperature rises till they reach optimum temperature
After that point, that enzyme is denatured and the reaction slows down
pH
Different enzymes work best at different pH’s
After they reach their optimum pH, the enzyme denatures and the reaction slows down
Uses of Enzymes
Seeds germination: Turn insoluble food stores soluble
Biological Washing Powders: Enzymes are added to washing powders to help remove stains
Food industry: Isomerase converts glucose into fructose. Pectinase makes fruit juice less cloudy
