What is protein denaturation?

A

Protein denaturation is the unfolding of a protein.

Why and how would the structure and function of a protein change if a hydrophobic amino acid was substituted for a hydrophilic one?

A

It would change because now the protein would have the hydrophilic amino acid on the outside and not folded toward the inside of it. Every time the structure changes, so does the function so that would change as well.
