Colour: Pale Straw
Nose: Apple, unripe pear, and nougat with hints of grilled nuts and brioche
Palate: Fresh and zippy, yet creamy with a fine persistent bread. The wine shows great balance with the freshness of apple evident yet it delivers complexity in the mouth with elegant just baked bread characteristics and subtle yeast derived flavours all finished with lingering acidity.
Medium body brings on lemon, apples with underlying toast, cream and vanilla.

Darley ‘The Filly’ Pinot Gris, Mornington Peninsula, Victoria, $55

Nose: musky fragrance with hints of peach, apricot and pear.
Palate: crisp and fresh with a nice acid backbone, finishes dry with wonderful length of flavours.

Wine Maker: Sandro Mosele (Port Phillip Estate and Kooyong)

Name comes from Darley Arabian, purchased by Thomas Darley in Aleppo, Syriah and shipped back to England to begin stud duties in 1704. 95% of all thoroughbred racehorses today trace back to this one stallion.

2012 Kay Brothers Basket Pressed Grenache, McLaren Vale, SA $75

Colour: purple with violet hues
Nose: bought of violets, sour cherries and red plums
Palate: medium bodied, structure is rich and round with sublime tannins. Fine elegant acid backbone with warm, juicy finish.

Just short of 12 months in large format oak barrels. Bright, vibrant fruit, precise acidity and is rich and concentrated.

2013 Leconfield Cabernet Sauvignon, Coonawarra, SA. $75

Colour: Medium to full red, with attractive Crimson.
Nose: blackberry fruit aromas, scented with cinnamon, nutmeg, and cedar notes derived from oak maturation.
Palate: fine, medium body. Velvety tannins balance the textures sweetness of the fruit. Tight clean finish.

Alcohol: 13.5%

Nose: lifted and aromatic, raspberries, roses and complex earthy undertones.
Palate: dry, rich, vibrant fruit and hint of Asian spices, supported by silky tannins and well balanced acidity.

Alcohol: 13.1%
Food Match: duck

  • 10% new oak and 90% 2-4 year old French oak barriques
  • traditional winemaking techniques used such ass small batch fermentation, wild yeast and delicate use of French oak, in order to achieve this.

2013 Dandelion Vineyards ‘Lionheart of the Barossa’ Shiraz, McLaren Vale SA $55

Colour: intense Crimson with youthful purple hues.
Nose: lifted blue fruits, blood plum, ripe blackberries and Christmas pudding-like spice flow out of the glass with spicy pepper, and hints of bramble and dark chocolate.
Palate: generous mouth filling sweet blackberry, raspberry and plums cover the palate with lashings of sweet spice. Firm but fine tannins and dark chocolaty nuances continue throughout the lengthy palate with youthful finish.

Alcohol: 14.5%

  • encourage the dandelion amongst the vines as they suppress winter weeds, provide mulch in the Summer.

  • new and old French oak to finish fermentation.

2013 Save Out Souls Chardonnay, Mornington Peninsula $55

Nose: honey dew melon and hazelnut
Palate: creamy start, primary fruit characters of melon and tropical fruits. Mealy characters along with hazelnuts from the lees too. Lime and citrus balanced with oyster shell minerality. Flavours linger with acid and alcohol playing off each other perfectly.

  • fruit sourced from 2 different sites in Ballnaring at the north end of the Mornington Peninsula
  • fermentation was in stainless steel with no yeast additions or temp control.
