Cognac, named after the town of Cognac in France, is a variety of brandy. It is produced in the wine‑growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime.

Nose: Yeasty, Anzac biscuits with a slight hint of acetone and lots of pears, Harris finds Chinese gooseberry characters and Latkis detects barley
Palate: Surprisingly sweet, lots of citrus, finishing with a leathery, almost musty, dryness
Comment: An excellent Cognac for the contemplation of the universe
About Cognac
Cognac, is a specific type of brandy produced in the town of Cognac, France. Production of cognac is strictly regulated by the BNIC, a French government institute. Brandy bearing the name “Cognac” must be produced in Cognac, France and adhere to the following BNIC production rules:
- White wine used in crafting the spirit is fermented, then double distilled.
- The Aging must occur in Limousin oak barrels for at least 2 years, where the spirit picks up tannins, color, and complexity.
Most cognacs are blends from multiple years. Label descriptions always refer to the age of the youngest eau-de-vie in the blend.
VS. - more than 2 years.
VSOP - more than 5 years.
XO - more than 6 years.
