General rule for food and wine pairing and the one rule that trumps all the other rules
The more fuller flavor in food, the more full bodied the wine. The milder the food, the wine should be medium to light bodied. Trump rule: the best wine to pair with a meal is whatever wine he/she likes
Explain 2 fruity wines
1) Dopff & Irion- Pinot Blanc from Alsace, France. Nice balanced wine, not too dry and not too sweet, fairly crisp for a fruity wine
2) Rudi Weist- Riesling from Rhein, Germany. Sweetest because after fermentation, it has a higher level of residual sugars. Aroma of stonefruit and apples.
Explain 2 crisp wines
1) Zenato- Pinot grigio from Veneto, Italy. It is more tart and acidic than the Adelsheim.
2) Kim Crawford- Sauvignon Blanc from Malborough, New Zealand. It is a popular sauvignon and it is a citrusy bouquet of tropical fruit.
Explain 2 buttery wines
1) Hendry- Chardonnay from Napa, Cali. It has an oakie taste due to being fermented in oak barrel the whole time.
2) Flowers- Chardonnay from Sonoma Coast, Cali. It is oakie, but has more of a clean and balanced taste.
Explain 2 mellow wines
1) Zuccardi- Malbec from Mendoza, Argentina. It is fruity and has a dried fig and plum aroma.
2) Jean Jacques Girard- Pinot Noir from France. A good middle ground pinot, not too spicy or too fruity, very fresh and light
Explain 2 spicy wines
1) Chapoutier (Cotes Du Rhone)- France, a GSM blend: 40% grenache, 50% syrah, 10% mourvedre. It is popular, dense, and full-bodied
2) Writers Block- Petit Sirah from Cali. Petit Sirah means a smaller grape, has aromas of blackfruit

1) Justin Justification- A blend of Cabernet Franc and Merlot from Napa, Cali. Has a bold front and a mellow finish.
2) 14 Hands- Cabernet Sauvignon from Columbia, Washington. Lightest of the cabs, fruity, not too dry
