Vinification -> A refreshing and completely natural sparkling wine, produced by “Méthode Ancestrale”. That means the wine gets to finish it’s fermentation on the same bottle in which it is sold. No degorgement, no dosage, no sulphite or other additives

Vinification -> Grapes from Langenlois and Gumpoldskirchen. The wine is produced in the traditional way. Spontaneous first-time fermentation and storage in steel tanks. Second-time fermentation in a bottle with 18 months of storage on the lees. Residual sugar 1.9 g / l

Character -> Light yellow color, fresh scent of citrus, flowers and minerals. Dry wine with pleasant mousse and balanced acidity, good length
Vinification -> Traditional champagne vinification with coquart presses that ensure gentle pressing. 40% of the champagne is older reserve wine that has been lying in older oak barrels of various sizes, while 60% is ‘wine of the year’. Saved for a minimum of 24 months before they degorge it by hand (à la volée)

Vinification -> Hand-picked grapes, 100% whole grape clusters in the vinification and stored 14 months on lees in oak barrels. Unfiltered
Nykteri

Character -> Intense aromas combining dry nuts with matured yellow fruits, honey, quince and a sophisticated minerality. Rich and oily on the palate with intense character, Nykteri is a pure ‘dynamite’ with concentrated body and a perfect balance among the electric acidity, the high ripeness and the long salty aftertaste
Vinification -> Only the free-run juice is lead into big barrels to start the fermentation. It’s also used a small amount of new oak. Lees stirring during fermentation and maturation. Total maturation of 16 month and released on the market 1,5 year after harvest. The grapes are sourced from old vines that may reach 100 years of age from plots situated in Megalochori and Pyrgos at an altitude up to 400 m. Harvest under high ripeness, inspired by the tradition, enhancing the structure and the aroma compounds

Vinification -> 20 to 35 year old vines in a soil of clay and lime. Organic farming. Temperature-controlled fermentation with natural yeast. 3 weeks maceration. 12 months barrel storage on used large French and Austrian barrels

Character -> Deep red with blue tint. Scent of red and dark berries, some herbs, hints of stable and leather. Dry, full-bodied, firm tannins and good acidity. Spicy fruitiness, good concentration
Vinification -> Hand-picked grapes from the Grezeaux vineyard. The grapes come from the oldest plots approximately 50 year old vines. The soil consists of gravel and stone, with an underlying layer of clay. The grapes ferment for 15-25 days in concrete tanks with subsequent storage in 3-5 year old oak barrels for 12 months before bottling
