Bodegas Santo Tomas was the first winery to be established in Baja California. Its original vines were planted in 1791 by Dominican Friars at the Misión de Santo Tomás de Aquino and the wine they produced was used for religious purposes. In 1888 it converted to a full-time commercial winery and was named Bodegas Santo Tomas in honor of the original Mission.

it was the first Mexican Winery to select a woman to be head winemaker. Laura Zamora has won over 220 medals in international competition since she took over in 2005

Bodegas Santo Tomas produces approximately 125,000 cases of wine per year across 40 different labels.

Process

A

After destemming, the must and pulp undergo a cold maceration at controlled temperatures, followed by a gentle pressing to separate the grapes from the skins. Approximately 30% of the must ferments in oak barrels and the remaining 70% in stainless steel vats. The wine thus obtained ages for two years on the lees and several months in the bottle.

The name Mongris comes from the contraction of the two words “monovitigno” (“single-varietal” in Italian) and “gris” (“grey” in the Friulian dialect, referring to Pinot Grigio).
Today Pinot Grigio is one of the most popular white grape varieties grown in the Collio DOC. Its presence in Friuli Venezia Giulia dates back to the second half of the XIX Century.
