Valle Seco Tinto Process

A

Grapes are picked by hand in the night to maintain acidity, and then cold soaked before pressing.

Fermentation is carried out in stainless steel tanks with organic certified yeast, seeds and skins, at low temperatures for a period of 3 weeks.

Once fermentation is complete, the wine is racked off and aged in 1st useFrench or American Oak barrels for 12 months and then an additional 12months after bottling.

Bodegas Santo Tomas was the first winery to be established in Baja California. Its original vines were planted in 1791 by Dominican Friars at the Misión de Santo Tomás de Aquino and the wine they produced was used for religious purposes. In 1888 it converted to a full-time commercial winery and was named Bodegas Santo Tomas in honor of the original Mission.

it was the first Mexican Winery to select a woman to be head winemaker, Laura Zamora.

In 2019, Christina Pino took over the role and is beginning to introduce organic and sustainable farming practices, and low intervention winemaking techniques

A

Fermentation occurred in open top stainless steel tanks over a period of 14 days on skins and seeds. Wine was then racked off the sediment and then returned to the same tank and aged for 9 months.

  • All of the monovarietal wines are made from estate fruit.
  • Their southwestern facing vineyard site is located 11 miles up the Valle de Guadalupe from the Pacific at an elevation of 1,000 ft.
  • They are one of the first wineries in Mexico to make a fully certified organic and biodynamic wine.

A

Cold Soak – 24 Hours. Macro-Bin Fermentation. Pressed to tank post fermentation. Barrel malolactic bacteria inoculation. Barrel aged 27 months on 100% Neutral oak. Clones kept separate from Field all the way through to barrel aging. Blended together after trials before bottling.

Cória Caveat

A

Bi-cultural family: Luis Cória born & raised in Mexico, Janice in norther Idaho. In 1988, they purchased their first 9 acres and by 1999, their vineyard grew to 104 acres.

Varietals include Pinot noir, Pinot gris, Chardonnay, Viognier and Riesling planted on mostly Nekia clay soils and elevations ranging from 400 to 850 feet.

Currently the whole family is involved in what makes Coria Estates a thriving vineyard and winery. Luis and Janice manage the vineyard and administrative side of the business, and their youngest daughter, Aurora, is the winemaker, making this winery women Led.
