Valle de Guadalupe, Baja California, Mexico (Valle de los Ojos Negros)
Duoma Caveat
Duoma began in 2011 by Carla M. Figueroa Torres and Eliecer Rodríguez Arroyo, making this winery Female led, and from Mexico.
They use their hands in the winemaking processes, where a more direct connection with the wine is created.
They use a minimal intervention style of winemaking that focuses on reflecting the Baja California grape in each bottle, seeking the best interaction of the components that give the wine its final quality; expressive, aromatic and pleasant wines on the palate.

Process
No irrigation,hand-harvested, Whole-cluster pressing; first fermentation occurs in temperature-controlled, stainless-steel vats, transforming the must into still wine. Six months later, the wines are blended to achieve the distinctive flavor profile of the brut réserve. Blended wine is then bottled with a specific yeast added to relaunch the second fermentation in bottle. The wine rests on lees a minimum of 12 to 16 months prior to disgorgement. Finally, the dosage is added to provide the particular brut style of this sparkling wine.
