Calcareous soils, 800-1150m in altitude (at the foothills of the Troodos Mountains). Vines up to 70 years old. Hand picked, cold soak before fermentation, indigenous yeast. Lots of citrus and tropical fruit notes. Soft on the palate.
Family owned. First private, regional winery in Cyprus (1987). Cypriot vineyard is the only vineyard in Europe untouched by phylloxera.

Over 23 different parcels of land throughout Sancerre.
A little bit of lees aging
The family has been making wine since the 1700’s. Sylvain Bailly’s granddaughter, Sonia, has been the winemaker since 2007.

“Grand Cru” isn’t a legal term in Austria, in this case it designates the winery’s best vineyard
Extra hang time (late September, early October). Stainless steel fermentation, then large format acacia wood barrels for malo and aging.
Very fresh, long finish, almost salty.

Anderson Valley, CA
Sustainable farming, sandy loam with clay, neutral French barrels, 13% ABV
South facing slope, cooled by marine air at night. Williams Selyem, Flowers, Copain and Littorai also source fruit from this vineyard.
White flower, crushed rock, peach, lemon and honey nose. Pear, apricot, sea salt on the palate. Medium bodied, well balanced.
