🥔 cooked with poppyseeds flavoured with whole spices and turmeric
bhaja
Anything deep fried with or without coating with a batter -brinjals, vegetables or fishes
chingri malai curry
small sized prawn are stewed in a gravy made with boiled onion paste and coconut milk
chorchori
a veg dish flavoured with panch phoran, poppy seed and mustard seed paste
Chutney
made with mangoes or tomatoes tempered with mustard seeds are popular. dates and raisins are also used
chenna sweets
rasgulla, chamcham, sandesh
doi mach
fish is stewed in curd based gravy
kosha mangsho
a mutton dish marinated and cooked to a spicy aromatic semi-dry gravy cooked in mustard oil
luchi
deep fried puris similar to puris but made with refined flour
mishti doi
milk is cooked with some caramelized sugar and set into pots for preparing sweet yoghurt
snacks
jaal muri and phuchkas
radha ballavi
similar to kachori fm UP where urad dal pithi is filled in the dough. it is rolled and deep fried
