A

Warm continental with moderate rainfall.

Best vineyard are low yielding on the foothill of the alps, altitude and water body mitigate the climate.
The flat lands close to the river Po produce high yielding inexpensive wines

Soave

A

From Garganega grape
Produced on limestone, clay that slows down the ripening, leading to more flavour in the grape yet high acidity.

Best example age well, developing almond and honey aroma

Valpolicella

A

From Corvina grape - red cherry fruit driven, light tannins and body

Produced on limestone, clay that slows down the ripening, leading to more flavour in the grape yet high acidity.

  • Valpolicella DOC from flat land
    -Valpolicella Classico DOC from foothills
  • Valpolicella Ripasso is made by fermenting the remaining sugar of the Amarone skins

Three DOCG are made from passito wines (passito increase structure and concentrate flavour):

  • Amarone della valpolicella DOCG - dry or off dry
    Made from dried grapes, red berry and spice flavour, aged in oak
  • Recioto della valpolicella DOCG - sweet
  • Recioto di soave DOCG - sweet, also made

White DOCG 3

A

Soave Superiore DOCG (min 12% abv) - Min 80% Garganega and max 30% Chardonnay and Pinot Bianco.
High acidity, full body.
Fruity with green fruit and stone fruit, spices and white pepper. Ageing can add honey and almonds.
The soil is mainly Volcanic rocks and clay on the hills up north and sand and alluvial soil down the flat land at south.
Aged for 3 months in the bottle. Drink young.
Classico
Riserva Aged 3 years in the bottle.
1. Northern foothills
- soils are limestone, clay, and some volcanic rock
- grapes ripen slowly due to altitude
- resulting wines have higher acid and can age
2. Southern flat plain
- soils are sandy and alluvial
- grapes ripen faster
- resulting wines are fruitier and are meant to be drunk young

A

Amarone della Valpolicella DOCG - Max 50% Corvina or Corvinone, Rondinella e Molinara might be added.
Grapes are sun semi-dried for 3 months.
Aged in oak min 2 years.
Riserva aged in oak for 4 years (14% abv)

Recioto della Valpolicella DOCG -
Max 50% Corvina or Corvinone, Rondinella e Molinara might be added.
Semi sweet to sweet
Grapes are sun semi-dried between 3 weeks and 3 months.
Aged in oak min 2 years.
Classico e Valpantena are the two area that can put their name on the label.

Bardolino Superiore DOCG e Bardolino Superiore Classico DOCG (min 11 percent abv)
Max 40% Corvina, Max 40% Rondinella, Max 15% Molinara
Red or Rosé
Aged for 12 months

Montello Rosso DOCG - Cab Sauvignon, cab franc, Merlot, carmenere

Friularo di Bagnoli DOCG - Piave

Malanotte del Piave DOCG - Raboso

Valpolicella DOC (min 11% abv) - Max 50% Corvina or Corvinone, Rondinella e Molinara might be added.
Wines are low acidity, low tannins.
Fruity, cherries
Easy drinking wine.
Superiore aged for 1 year (12% abv)
Classico is located on the hills on the Alps.

Valpolicella Ripasso DOC -
Max 50% Corvina or Corvinone, Rondinella e Molinara might be added.
The skins of the Amarone are added to the fermented Valpolicella, allowing a second fermentation to happen.
As result, the wine will be more intense than Valpolicella.

Those Communes are the only ones allowed to add their name on the label.
