*originally also had to be aged in a bonded warehouse

-Warehouses have to be surrounded by a berm to contain burning whiskey (protect other warehouses) -sprinkler systems and multiple escape routes required

What is "heat cycling?"
-Heat cycling is done by some distilleries in the wintertime when it gets cold enough to potentially "shut down" maturation -when the temperature of whiskey gets down below about 60 degrees, the warehouse is heated until the whiskey gets up to about 80 degrees, and then it is allowed to cool down to 60 degrees and then the process is repeated

What is the standard size of an American Ironclad Rickhouse?
-Ironclads are usually 7 stories tall (some of the new ones are 9) -metal skin on a solidly built wooden frame -usually hold around 20,000 53-gallon barrels

Where does heat concentrate in a rickhouse?
-Rising heat concentrates on top floors -barrels will age more "quickly" -more evaporation -woodier, drier, spicier flavors and whiskey becomes more astringent -"high and dry" -can smell of acetone if left too long

What are the differences between Ironclad and Stone or Brick warehouses
-Stone and brick have less air movement -generally top out at 3 or 4 stories -Brown Forman uses brick warehouses only for its "heat cycling at Old Forester, Early Times (now Sazerac) and Woodford Reserve

The Lincoln Country Process Filtering aged spirit through 10 feet of hardwood (Jack and Dickel used Sugar Maple) charcoal to "mellow" it before barreling.

What is the difference between how Jack Daniel's and Dickel execute the Lincoln County Process?
At Jack the whiskey is trickled down through the 10 feet of sugar maple charcoal. At Dickel the vats (10ft high - 5 ft across) are completely filled with spirit and then gets refilled when it drains off. Vats at Dickel are also chilled
