When should you reject shipments of food?
A
When the vehicle is dirty or their is evidence of pests. When the food is spoiled, damaged or past is ‘best before date’.

Received foods should be put away in this order:
A
1st: Potentially hazardous foods requiring refrigeration such as meats, dairy and seafood.
2nd: Frozen Food
3rd: Less hazardous foods that require refrigeration (fresh uncut fruits and veggies)
4th: Dry Goods

What does FIFO stand for?
A
First in, First out. Move older stock to the front of the shelf and new stock to the back. If stock is expired, get rid of it.

What are some tips for storing food safely?
A
- Protect food from contamination by wrapping and covering it.
- Make sure that all food is labeled with the name and date received.
- Store food at least 15 cm off of the ground.
