Polymer molecules, enzymes are biological catalysts.

A
Carboxyl (-COOH) and Amino (-NH²)

A
Condensation reaction, elimination of water. Peptide link formed (CONH)

Breaking down of proteins
A
Hydrolysis, water causes splitting. Can be hydrolysed using concentrated sulphuric acid (HCl). Can be identified using chromatography.

Intermolecular bonding in proteins
A
Long chain molecules form spirals, sheets.
Hydrogen bonding
When heated, denaturation happens and proteins change shape - thus changing the texture in foods when cooked.
