A
Chemical used to prevent non-polar and polar liquids from separating. Solution which contains small droplets of one liquid dispersed in another.

How are emulsions made?
A
Edible oils are reacted with glycerol to form molecules (one or two fatty acids linked to glycerol backbone)

How do emulsions work
A
One or two hydroxyl groups are hydrophilic (dissolve in water), whilst fatty acid chains are hydrophobic (dissolve in oils)
