Unit 2 Proteins Flashcards
Why are proteins important?
Major structural materials of animal tissue
Maintenance and regulation of life processes
What are enzymes?
Are proteins which act as a biological catalyst
How are proteins made?
Condensation reaction between amino acids
How does condensation reaction between amino acids work?
The amino group of one amino acid and the carboxly group of another join with the elimination of water
What functional groups are present in amino acids?
Carboxly group
COOH
Amino group
NHH
What link is formed during condensation of amino acids?
Peptide/amide link
CONH
How can proteins which fulfill different roles in the body be made?
By linking together diffrent sequences of amino acids
What are essential amino acids?
Those that cannot be produced by the body and must be obtained by diet
How can proteins be broken down to amino acids?
Enzyme hydrolysis
Describe the structure of a protein?
The long chain molecules can form spirals, folded sheets or globular shapes.
Hydrogen bonds are the intermolecular forces present between protein chains
When protein is heated the intermolecular bonds are broken and protein changes shape(denatured)
What does denturing of a protein cause?
Changes to texture of food when heated
