UNIT 2 : Fats and Oils Flashcards
How are fats and oils made?
Condensation reactions between glycerol and fatty acids
What are fatty acids?
Long chain carboxylic acids
What is the chemical name for glycerol?
Propane-1,2,3,-triol
What is a triol?
A compound with 3 hydroxyl (-OH) groups
What are some common fatty acids?
Stearic acid
Oleic acid
What group of compounds are fats and oils a part of?
Triglycerides
What is usually a liquid at room temperature?
Oil
What is usually a solid at room temperature?
Fat
What has more carbon-to-carbon double bonds?
Oils
Is the formation of a fat or oil a reversible reaction?
Yes
Where are fats and oils naturally occurring?
Plants and animals
What is the use of fats and oils in the body?
Storage of vitamins and minerals
What decides if a fat or oil is saturated or unsaturated?
The fatty acids
What is the bi-product of the reaction which produces a fat or oil?
Water
Where do the elements of water come from?
The H+ comes form the OH groups of the glycerol and the OH- comes from the OH group of the fatty acid
