Unit 10A Flashcards
Qualtity assurance vs Quality control
control is testing samples to ensure that they meet the specifactions of the sample whereas quality assurance is ensuring that the proper steps are done to ensure the product is consistent
QA
processing steps are preformed to ensure a constant sample
QC
testing a smple to ensure they meet the specifications of the product such as nutrient content, weight, colour ect
characteristics of a product can be divided into 2 subcategories?
sensory and hidden
sensory 3 categories
apperence texture and flavour
rheology
the study of the flow and deformation of a product
what is a bostwick consistometer used to measure
viscousity
measuring texture is based on
the force required for deformation - crunchy, crisp ect
what is the instron universal testing machine measure
texture
do instruments exist that can measure flavour objectively
yes
gas chromatography
conductivity measurements ( salt concentrations ) and refractometers (sugar) and ph measures
main flavour measurments
taste panels
what is nutritional value and example of
hidden quality attribute
what is accelerated storage trails used for
to determine the best before dates: products under elevated temperature - go bad sooner ?)
if you work in quality assurance what would some tasks be/ where would you work
what about QC
in the factory to ensure the correct processing steps are being followed to produce a consistent product
QC would be more in a lab testing a sample to ensure is meets the specifications
food processing is usually divided into what?
a sequence of unit operations
