TRB Menu: FAQs & Misc Details Flashcards
What sauces are gluten free?
All except the Caribbean Swag (made with one of our light beers, often the cream ale)
Do you use peanut oil for anything?
Yes. Our fryer oil is a peanut oil hybrid. However, it is heavily modified so that the allergy causing protein found in peanuts is entirely removed from the oil. The oils was researched deeply before we switched to it in order to confirm that peanut allergy guests would not be harmed by the change.
The wife of one of the owners has peanut allergies and still gets items that are fried in our oil.
Can I substitute more of one protein, for another on the Smokie’s Sample Platter?
Yes, but any protein substitutions will constitute a $5 upcharge. When/if we are out of a protein that normally goes on the platter, substitutions for the 86’d protein are allowed, free of upcharge.
Are the roasted veggies on the Roasted Vegetable Salad hot or cold?
Cold. The veggies are cut and roasted in-house, then stored in fridges and served cold.
How big is the portion of the Candied Pork Belly?
8 pieces of pork belly, if the pieces are smaller than normal the kitchen will often toss in an extra piece to compensate.
What vegetables come on the veggie mac?
The same veggies as the pizza minus the garlic clove (onion, tomato, carrot, peppers, broccoli)
Can I just get green peppers?
Green and red peppers are pre-mixed, they will not be picked apart in the kitchen.
Can I get all flats/all drums for wings?
No, the wings are pre-portioned to make cooking faster.
Can I get the Ultimate Beer Pizza gluten free?
Not entirely. We can give you a gluten-free crust, but the base, onion, and beer cheese all contain gluten.
Make guests aware if they ask for this!
Gluten allergy disclaimer
The kitchen does have flour in the air, we do take precautions but cannot 100% guarantee anything is gluten-free in regards to serious allergies.
Hot dish disclaimers
Woodstone Caprese and Mac n Cheese are served in the dishes they are cooked in. Warn guests of hot dishes when handing them their food.
